Ingredients

  • 1 1/4 cup cooked jasmine rice (Instant Pot Instructions here)
  • 1 cup diced tomatoes
  • 1/4 cup tomato sauce
  • 1/2 tbsp onion powder
  • 1/2 tbsp chili powder
  • 1/2 tbsp paprika
  • 1/4 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp lemon pepper
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tbsp parsley flakes

Directions

  1. Prep Rice (Instant Pot Instructions here)
  2. Oil the pan, heat the oil on medium heat
  3. When the oil is hot, add the rice and tomato sauce
  4. Cook on medium heat for around 5 minutes, or until the rice is lightly crispy
  5. Add tomatoes and spices
  6. Cook for another couple minutes, then remove from heat.
  7. Top with parsley flakes
