White Chocolate Macadamia Nut Cookies

Ingredients

  • 1 cup plant-based butter (Country Crock Plant Butter), room temperature
  • 1 cup white sugar
  • 1 cup light brown sugar
  • 2 tbsp egg replacer (Bob’s Red Mill Egg Replacer)
  • 4 tbsp water (for egg replacer)
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup white chocolate chips (Pascha Dairy Free White Baking Chips)
  • 1 cup crushed macadamia nuts

Directions

  1. Preheat oven to 350 degrees
  2. Cream together butter, sugar, and vanilla
  3. In a separate bowl, prepare “eggs”. Mix egg replacer and water thoroughly. Let sit for a couple minutes until thickened
  4. Slowly mix dry ingredients into the butter, sugar, and vanilla mix
  5. Add “egg” mixture
  6. Mix until dough forms
  7. Stir in white chocolate chips and nuts
  8. Line a baking sheet with parchment paper and form dough balls to your liking. Idk. It’s a cookie. Figure it out
  9. Bake for 10-12 minutes until golden brown. Do not over bake
