White Chocolate Macadamia Nut Cookies

Ingredients
1 cup plant-based butter (Country Crock Plant Butter), room temperature
1 cup white sugar
1 cup light brown sugar
2 tbsp egg replacer (Bob’s Red Mill Egg Replacer)
4 tbsp water (for egg replacer)
1 tsp vanilla extract
2 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup white chocolate chips (Pascha Dairy Free White Baking Chips)
1 cup crushed macadamia nuts
Directions
Preheat oven to 350 degrees
Cream together butter, sugar, and vanilla
In a separate bowl, prepare “eggs”. Mix egg replacer and water thoroughly. Let sit for a couple minutes until thickened
Slowly mix dry ingredients into the butter, sugar, and vanilla mix
Add “egg” mixture
Mix until dough forms
Stir in white chocolate chips and nuts
Line a baking sheet with parchment paper and form dough balls to your liking. Idk. It’s a cookie. Figure it out
Bake for 10-12 minutes until golden brown. Do not over bake
